View Full Version : Jamaican Jerk Chicken Marinade

I made up this marinade based on ingredients I've seen in my favorite store-brand marinade. My grocery store no longer carries my favorite marinade, so I made my own. It's delicious!!

JAMAICAN JERK MARINADE

1 cup Molasses
1/2 cup Soy Sauce
2 cups Raspberry Juice
1/2 cup Red Wine Vinegar
1 tablespoon Scotch Bonnet Peppers or Habanero Peppers
1/2 tablespoon Allspice
1 teaspoon Cinnamon
1 teaspoon Nutmeg
1 teaspoon Thyme
1 teaspoon Sage
1 teaspoon Tarragon

I love to use this jerk marinade on bone-in chicken breasts. Just let the chicken breasts marinate for a day, and then broil them. Yum!!!

Are the peppers raw/chopped or grilled? Or is there a bottled version? If raw, I'm assuming you have to wear gloves to handle them?

Cara, I use raw and chopped peppers. If you want extra heat include the seeds in the marinade.
