I just invented this recipe last night.:) Pretty good...my two-year old daughter ate it, spinach inlcuded, so it's a winner in my book!

(Disclaimer! I didn't exactly measure while I was cooking, so these are estimates. Use your best judgment!)

2 1/2 cups cubed, cooked chicken breast
1 cup cooked spinach, chopped finely
1 tomato, diced
1 onion, diced
1 tb. garlic (I use jarred garlic, not powder, not fresh, but I'm sure you could use any variation, just adjust the amount)
1/4 cup Olive Oil
1 can beans, rinsed and drained. (I used White Northern, because they blended in nicely with the chicken)
Salt, Pepper, Oregano, Basil, Thyme
Sliced Mozzarella Cheese
While Wheat Tortillas

Make sure your veggies are cut small! Mix everything but dry spices and cheese in a large skillet. Saute several minutes until veggies are cooked. Sprinkle spices in to taste and toss around, cooking another minute.

Place two slices mozzarella cheese on tortilla, top with mixture, and roll. :tt2: Yummy, healthy, and easy!
