2 cups of sugar
2 cups of pecans, roughly chopped
1 large can of Pet or evaporated milk. (this is also called Carnation milk up north)
1 teaspoon vanilla

Roll out some wax paper on the counter. (do this beforehand!)
Boil the sugar, vanilla, and the canned milk in a large, heavy boiler until it reaches the soft ball stage. It should turn a deep brown/blonde color.
Take the boiler off the stove and place it on a hot pad or thick folded towel.
Get a big sturdy spoon and pour in your pecans
Stir until until it gets rough looking, and begins to pull away from the sides of the pan. Take two small 'teaspoons' and start scooping them out onto the wax paper. Do this as fast as possible, placing them about an inch or so apart
Place in an airtight container.
