View Full Version : Gravy Almond Boneless Chicken

Here it is and it is great!!!

2 whole medium size chicken breasts or 2 lb. boneless chicken cut in 1 1/2 inch strips.
salt and pepper to taste
8 t. oil
8 t. corn starch
2 unbeaten egg white

1 1/2 c. pancake mix
2 egg
1 c. water

2 small can (1 41/2 oz. each) chicken broth (can also use beef broth)
6 T. corn starch (seemed a little too much cornstarch, consider downplaying starch)
1/2 c. water

For Serving:
2 c. shredded lettuce
2/3 c. toasted slivered almonds
2 green onions (leaves only) chopped

1. Mix marinade ingredients and soak chicken strips 15-20 minutes at room temperature stirring occasionally.
2. Mix the batter ingredients and dip each chicken piece into the batter. Put in a deep fryer at 375 or in a pan with one inch of very hot oil and cook until light or golden brown (3-5 minutes approximately). Remove with tongs or a slotted spoon to paper towels to drain.
3. To prepare the gravy, warm the broth until bubbling. Mix the cornstarch and water; add. Cook over low heat until thickened (this takes just a few minutes).
4. Cover serving plates with lettuce and place chicken pieces on top. Cover with a little gravy and top with some of the almonds and onion greens. (Serves 4-8)
