One of my faves--
Seedy Avocado Bagels
This is great for when unexpected company drops in, when you don't know what to eat for breakfast, lunch or snack-- I use mini-bagels, especially for snacks.
I ripe avocado, mashed
lemon or lime juice to taste
salt & pepper to taste (coarse black pepper is best).
1 bagel, sliced and toasted
about a T. salted sunflower seeds
Sliced ham, sliced turkey, sliced chicken, sliced anything you want, even fried egg works.
Per person: 1 mini-bagel or 1/2 regular bagel
Spread with mashed avocado mix
Pat seeds into the avocado
Add a slice of anything you want or a fried egg (or both!)
Yummy, and avocados are good for you--mono-unsaturated fatty acids!.
Sounds yummy Judy.
Now I'll have to wait for the avocados I bought today to ripen and try this inventive snack.
Hope those avocados ripen quickly! Today I'm going to post another inventive recipe, but in the dinners section. And by the way, many of these inventive recipes I'll be posting are born of hearing the school bus coming, saying OMG! Everything's still in the deep freeze.
