Easy Rolling Pie Crust
5 cups all purpose flour
2 tsp. salt
2 cups shortening
1 tbsp. vinegar or lemon juice
In a large bowl, combine the flour and salt. Cut in the shortening with a pastry cutter until the pieces are the size of small peas. In a one cup measuring cup, beat the egg. Add the vinegar or lemon juice to the cup, then add enough water to equal 1 cup total. Add the egg mixture to the flour mixture, mixing until the dough forms a ball. Evenly divide the dough into 4 or 5 balls.
For immediate use, roll out dough and fit into a pie plate, following the directions on facing page.
To store unrolled dough, tightly wrap individual balls and place them in the refrigerator or freezer. Thaw in the refrigerator before using.
