Seedy Avocado Bagels
This is great for when unexpected company drops in, when you don't know what to eat for breakfast, lunch or snack-- I use mini-bagels, especially for snacks.
I ripe avocado, mashed
lemon or lime juice to taste
salt & pepper to taste (coarse black pepper is best).
1 bagel, sliced and toasted
about a T. salted sunflower seeds
Sliced ham, sliced turkey, sliced chicken, sliced anything you want, even fried egg works.
Per person: 1 mini-bagel or 1/2 regular bagel
Spread with mashed avocado mix
Pat seeds into the avocado
Add a slice of anything you want or a fried egg (or both!)
Yummy, and avocados are good for you--mono-unsaturated fatty acids!.
