1 large rack pork ribs
1 c diced onion
1 c water
1 c ketchup
2 t dry mustard
2T dark brown sugar
2T lemon juice
2T white vinegar
2 T worchestershire sauce
2 T cooking oil
Cut ribs into pieces (one bone per piece)
Simmer in a large pot of water for up to one hour
During this time, you can mix up the sauce, minus the onions, and set aside
Remove ribs when most of fat has simmered off, dispose of water
Place ribs in large skillet with the oil, and brown on both sides, a few at a time.
When ribs are all lightly browned, set aside and keep warm.
Saute onion until tender. Stir prepared sauce well as sugar may have sunk to bottom. Pour over the onions & bring to boil, lower heat to med. low, and simmer until reduced by about one third.
Place ribs in oven-proof pan, pour over sauce, cover and bake at 350 F for an hour or two until very tender. Check every half hour to see if sauce is getting gummy. If it is, add a half cup of water at a time.
Serve with rice and salad and lots and lots of napkins.
