1 cup cottage cheese
1/2 cup all purpose flour
1/4 teaspoon salt
3 tablespoons vegetable oil or olive oil
1/4 cup milk
1/2 teaspoon vanilla
In a blender container, combine all of the ignredients and blend thoroughly. Refrigerate the mixture in the blender container overnight.
THe next morning, lightly stir mixture. Oil and heat a griddle over medium heat. For each pancake, pour 1/4 cup of the mixture onto the hot griddle. Once bubbles begin to form, flip the pancake and finish cooking on the opposite side.
Fold each pancake in half, place on a pretty plate, dust with powdered sugar, and top with syrup.
