Heres a tasty Thanksgiving treat my family adores.

3 eggs
1-cup sugar
2/3 cup pumpkin
1 teaspoon lemon juice
3/4-cup flour
1-teaspoon baking powder
1/2-teaspoon salt
2-teaspoon cinnamon
1-teaspoon ginger
1/2-teaspoon nutmeg
1 cup powdered sugar

Beat eggs on high speed 5 minutes. Gradually beat in sugar, stir in
pumpkin and lemon juice. Sift dry ingredients together gradually add to
wet. Spread on greased and floured cookie sheet. Bake at 375 degrees
for 15 minutes. Turn onto dishtowel spread with powdered sugar. Roll
cake and towel together. Cool unroll and spread with filling.

1 cup powdered sugar
2 to 3 ounce package cream cheese
4-table butter or margarine
1/2-teaspoon vanilla

Cream together.
