I found this on the mass recipes website: http://www.massrecipes.com/recipes/0...drice1497.html The only thing I didn't like about it was there wasn't enough, so it might be beneficial to double the quantity. It went great with the Gravy Almond Boneless Chicken!

Here it is:
Chinese Style Fried Rice
1-1/3 cups water
1-1/3 cups instant rice
2 Tbs. butter or margarine
1 egg, beaten
1/3 cup chopped onion
2-3 Tbs. soy sauce

1. Bring 1 cup of water to a boil in a saucepan. Stir in rice. Remove from heat; cover and let stand 5 minutes.
2. Cook egg in butter in a 10" skillet until set.
3. Add onion and rice. Cook and stir over medium heat until rice and onion are lightly browned, about 5 minutes.
4. Combine remaining water and the soy sauce; stir into rice. Makes about 3 cups.
